Ingredients
1 pound ground beef
1 tablespoon vegetable oil
1/4 cup soy sauce
1/4 cup honey
2 cloves garlic, minced
1 teaspoon ground ginger
1 head of broccoli, cut into bite-sized pieces
2 cups cooked brown rice
Directions
- Cook rice according to instructions on bag.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking up any clumps with a spatula. Drain excess fat.
- In a small bowl, whisk together the soy sauce, honey, garlic, and ginger. Pour the mixture over the beef and stir to coat evenly.
- Add the broccoli to the skillet and stir to combine with the beef. Cover the skillet and let cook for 5-7 minutes, until the broccoli is tender.
- To serve, divide the cooked brown rice between four bowls. Top with the beef and broccoli mixture and mix thoroughly.
