These beef and broccoli bowls are a simple and unique way to enjoy ground beef. The sweet and savory sauce pairs perfectly with the tender beef and crunchy broccoli. Plus, they’re a healthy and satisfying meal option that’s perfect for a quick dinner or meal prep.

Ingredients

  • 1 pound ground beef

  • 1 tablespoon vegetable oil

  • 1/4 cup soy sauce

  • 1/4 cup honey

  • 2 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 head of broccoli, cut into bite-sized pieces

  • 2 cups cooked brown rice

Directions

  • Cook rice according to instructions on bag.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking up any clumps with a spatula. Drain excess fat.
  • In a small bowl, whisk together the soy sauce, honey, garlic, and ginger. Pour the mixture over the beef and stir to coat evenly.
  • Add the broccoli to the skillet and stir to combine with the beef. Cover the skillet and let cook for 5-7 minutes, until the broccoli is tender.
  • To serve, divide the cooked brown rice between four bowls. Top with the beef and broccoli mixture and mix thoroughly.
